Dusit Thani Maldives Hires Executive Chef Jaume Esperalba
Dusit International appoints Executive Chef Jaume Esperalba for their newest luxury resort in the Indian Ocean, Dusit Thani Maldives. An accomplished chef who has worked at five Michelin-awarded restaurants in Spain, Jaume will oversee both Food & Beverage and Kitchen operations for the resort scheduled to open in January 2012.
“My philosophy for cuisine is to give guests the opportunity to feel close to nature,” explains Jaume Esperalba, Executive Chef for Dusit Thani Maldives. “In the Maldives the most authentic experience is cooking in the sun and sand.”
Located on Mudhdhoo Island in Baa Atoll, Dusit Thani Maldives is 35 minutes by seaplane from the capital Malé. Surrounded by a vibrant 360 degree coral reef and turquoise lagoon, Dusit Thani Maldives is a landmark addition to the company’s global brand. Baa Atoll is not only home to the resort but also has the distinction of being a UNESCO World Biosphere Reserve.
Chef Jaume has designed new concepts for the three restaurants and two bars on the resort. Benjarong is Dusit Thani’s signature Thai restaurant, Market creates classic favorites all day and the Sea Grill serves ocean catch, working with local fisherman to promote sustainable fishing in the Maldives. Supervising a staff of 50, Jaume focuses on simplicity, pure food and holistic dining. Some of his favorites creations are detoxifying menus for breakfast and cooking in the sand, a unique dining experience on the beach.
With years of experience and inspiration, Jaume has found that guests desire a return to the culinary basics of light and healthy food. He joins Dusit Thani Maldives after three stints with Six Senses at Soneva Kiri in Thailand, Soneva Fushi and Soneva Gili in the Maldives.
Born into a family business of of traditional Spanish charcuterie, Jaume’s childhood love of food landed him at the Hostelry & Tourism School of Sant Pol de Mar in Barcelona, Spain. After twelve years working in some of Spain’s best kitchens including Michelin-star restaurants Drolma and Raco de Can Faves, Jaume became a hotel Executive Chef first in his home country and then the Dominican Republic and beyond.
Now after 27 years of creative cuisine, Jaume brings his culinary philosophy of being close to your surroundings to Dusit Thani Maldives.
