Chef Christian Ham at D’Sens
This month we are proud to welcome French Chef Christian Ham as Head Chef of D'Sens,our top floor restaurant with a reputation for creating some of the finest French cuisine in Bangkok. With a passion for authentic cuisine Chef Christian is presently perfecting his lunch and dinner menus that we believe will raise the bar for fine dining in Bangkok.
Chef Christian brings with him almost 20 years experience from the kitchens of some of France and Asia’s leading restaurants. From 3 Michelin star Au Crocodile in Strasbourg where we began his career in 1992 to his appointment as Head Chef Arelier de Joel Robuchon in Hong Kong, from August 2010 until August 2011.
Between these years Chef Christian was instrumental in the success of several Michelin star restaurants in Paris including Chef de Partie for the world renowned, Chef Joel Robuchon. The work required his expertise on the TV show ‘Bon Appetitie Bien Sur’ aired daily on the French National Channel and the opening of three Joel Robuchon restaurants in Tokyo.
With a passion for the arts, Chef Christian draws inspiration from the great composers, painters, writers and philosophers to create a harmony of the senses and to fortify to determination to never stop learning and improving. Reflection this determination, Chef Christian quotes the 17th century Dutch philosopher Baruch de Spinoza, “The day we stop learning is the day our thinking will die.”
Staying true to the essence of each ingredient used is central to Chef Christian approach to preparing cuisine. “I believe in maintaining the flavor of the ingredients I use, to allow the senses to experience the subtle nuances of these flavours on a subliminal level.”
Truly an artist at work, Bangkok will be hearing a lot more about the exciting new creations coming from the kitchens of D’Sens Restaurant.
