Dusit Thani Manila's Philippine Cuisine: Looking Back... Looking Forward

All roads led to Dusit Thani Manila last Monday, June 7 as the hotel officially marked their celebration of the Philippines’ 112th Independence led by director of food and beverage Gilbert Uy, with the much awaited grand opening of Philippine Cuisine: Looking Back…Looking Forward.

The week-long event held at Basix All-day-dining restaurant which ended last June 12 showcased proudly Filipino andicrafts and Filipino dishes created with a twist by renowned guest chef Stephanie Zubiri.

Philippine Cuisine: Looking Back…Looking Forward allows us to look back once more in the rich culture of the country, hailing the best of the Philippines and at the same time looking forward to the future of the culinary industry where different innovations are starting to evolve befitting in the modern world we now live in.

The grand opening highlights were the dance repertoire of the Food and Beverage staff of Dusit Thani Manila performing the classic ‘Paseo de Iloilo’ followed by the modern dance version of the song ‘Bebot’ of Black Eyed Peas, and the unique introduction of guest chef Stephanie Zubiri who was carried while sitting on top of two bamboos blissfully waving to all guests present during the evening.

Everyone was able to savor the fine selections of all-original contemporary Filipino dishes of Ms. Zubiri which included Albondigas (Chorizo, Cashew and Pork Albondigas in Tomato Sauce), Balsamic Beef Adobo (Beef Adobo Cooked Using Balsamic Vinegar), Bicol Express Chicken (Bicol Express Broiled Thigh Chicken Fillet), Lechon Kawali (Lechon Kawali with Soy, Mustard and Tarragon Vinaigrette), Moules Frites Filipino Way (Fried Potatoes and New Zealand Mussels Sautéed with Rice Wine and Soy Sauce), New Style Pancit, Piniritong Corned Beef, Salmon Kinilaw (Salmon “sour-cooked” in Vinegar), Sinigang Bouillabaisse, Shrimp Cocktail, Coconut-Tanglad Panna Cotta (Coconut-Tanglad Panna Cotta with Red Berry Coulis), and Lavender Turon.

Dusit Thani Manila’s Independence Celebration was in partnership with Cebu Pacific Air, Kultura Filipino, BDO, Pearl Farm Resort Davao and Arce Dairy.
