Dusit Thani Dubai chefs reigned supreme in Salone Culinaire 2018

Dusit Thani Dubai chefs proved once again that they are the crème de la crème of Dubai’s culinary scene after bagging 1-2-5 gold-silver-bronze medal haul in the recently concluded Salon Culinaire 2018 held at the World Trade Center last 18 – 22 February 2018.

A multi-awarded kitchen artist, Chef Wasan Mokan reclaimed the top spot for Ice Carving Individual Category after failing to join last year due to health issues.

Mokan bested three other competitors from Philippines and India by showcasing an intricately carved mythical “Payanark” a serpent-like protector usually seen in Thai temples.

He was also awarded with a Merit in Fruit and Vegetable Carving Showpiece, showcasing a “Tuk-tuk”, an automatic rickshaw which is the most popular transportation in Thailand for tourists.

Fellow Thai national and kitchen artist, Chef Wannapa Yensiri managed to snatch two silver medals in Practical Fruit and Vegetable Carving and Fruit Carving Showpiece.

“It was a tough competition this year since the judges did not award any gold medal for our category,” said Yensiri.

PAX Ristorante’s Sous Chef Mehdi Boumaza secured three bronze medals for himself in Practical Cookery for chicken, beef, and fish despite a five-year hiatus from the competition. Chef Gaffar Khan brought home a bronze for his second year for Practical Butchery.

Pastry Chef Thilini Kularatne managed to bring home as well a bronze medal for Practical Decoration despite failing to add the finishing touches on her chocolate mousse cake.

“It was very hot inside the venue that the chocolate garnish that I have keeps on melting, A bronze medal is not bad at all,” said Kularatne.

Salone Culinaire is the biggest culinary competition in the Middle East which aims to test the differing skills of entrants whilst also celebrating the preparation and presentation of food and its accoutrements in attractive and pleasing forms.
