Dusit Thani earns top honors in PHARE Culinary Competition:chef donates money to Dusit SmilesMay 2018
For the second year in a row, Dusit Thani Guam Resort proudly earned top honors in the Culinary Competition of the Pacific Hotel and Restaurant Expo or PHARE. Alfredo’s Steakhouse Commis Chef II, Jon Cabral, was awarded 2nd Place for his dish featuring madai, also known as pagrus major or red seabream; it is a fish species prized both for its flavor and for its traditional use as an auspicious food. Cabral’s dish was comprised of a sous vide madai, madai fumet-tomato nage, a beurre blanc sauce, bunashimeji mushrooms, dehydrated tomato skin and both friend and softened leeks. Wanting to take a more classic approach to his dish, Cabral started with a beurre blanc sauce and then focused on what ingredients best pair with fish: leeks, mushrooms and tomatoes. “I am also a huge fan of using one ingredient multiple ways in a dish so for the leeks, I took the white part and fried them to add a crispy texture and took the green part of the leeks and softened them to give both color and to add in almost like a seaweed texture,” said Cabral. The combination proved to be a winning concept with Cabral receiving $300.00 for his creativity and execution. Even more notable however, was that Cabral chose not to keep the money. Instead, he donated all $300.00 to Dusit Smiles Inc., a non-profit local organization dedicated to providing funding to children on Guam in need of surgery for cleft lip and cleft palate. “His authenticity to Dusit’s Vision, Mission, Beliefs, and Values is honorable for all employees to follow. He is definitely a valued asset in our organization,” noted Marina Guerrero, Director of Human Resources. Cabral has been with Dusit Thani for the past 19 months and aspires to be one of the first Michelin star chefs from Guam to work at a 3 star Michelin restaurant in New York, Chicago or San Francisco.
