Dusit Thani Guam Resort placed top three in the Pastry Chef Competition of the annual Micronesian Chef’s Association Salon Culinaire which provides opportunities and development for chefs on Guam. Competitors in the pastry competition consisted of single individuals who are passionate about pastries and desserts. Earning third place was Junior Sous Chef Marivic Capati for her “Citrus Madness”. The dish consisted of: citrus mousse with coconut-almond dacquoise served with haupia, minted lime-mango, calamansi curd, raspberry sauce and coral tuile. As part of the competition, chefs must include an ingredient from the mystery black box; this year it included frozen coconut, coconut flakes, Anchor™ whipping cream, calamansi and lime. The objective was to prepare an upscale and modern dessert menu item for a group of five. Entries are judged on sanitation & cleanliness, creativity/best use of product, presentation and taste. This is the second consecutive year that Dusit Thani Guam Resort has placed in the competition. Congratulations to Chef Marivic and all Dusit representatives on a job well done!
