At Chef’s Table Kōyō, we offer two distinct culinary experiences: an innovative omakase course that fuses Japanese tradition with modern sensibilities, and authentic Edomae sushi crafted in the spirit and technique of the renowned Sushi restaurant Ishibashi Masakazu of Ginza, Tokyo. Starting 1 August 2025, a new sushi counter will open within Chef’s Table Kōyō.
Crafted with the spirit and techniques of the renowned Sushi restaurant Ishibashi Masakazu of Ginza, Tokyo, skilled sushi chefs will serve traditional Edomae sushi in an omakase style, using meticulously selected seasonal ingredients. This addition brings new depth to our culinary offerings,
complementing the existing fusion omakase with an elevated sushi experience.

Celebrate the most enchanting nights of the year with our Christmas Exclusive Dinner Course, curated especially for this festive season. For the main course, tender wagyu fillet and sirloin are artfully grilled over charcoal and teppan to draw out their natural richness. The evening concludes with a touch of theatre, as a flambé dessert is elegantly finished before you—a fitting finale to a festive dining experience that stirs all the senses.

In January, at Chef’s Table Kōyō, the “Mastering Fish at Home – Secret Methods for Cooking Thin- and Thick-Skinned Fish” class offers a unique opportunity to experience firsthand the optimal cooking techniques for different types of fish. Participants will also learn how to prepare exquisite sauces using ingredients readily available at home. By practising the handling of thin- and thick-skinned fish such as flounder and grouper, attendees can elevate their home fish cooking to a professional level.
