At Chef’s Table Kōyō, we offer two distinct culinary experiences: an innovative omakase course that fuses Japanese tradition with modern sensibilities, and authentic Edomae sushi crafted in the spirit and technique of the renowned Sushi restaurant Ishibashi Masakazu of Ginza, Tokyo. Delight in a sensory-rich dining journey that showcases the finest seasonal ingredients.

Our skilled sushi chefs carry on the spirit and techniques of the renowned Ginza restaurant Sushi Ishibashi Masakazu.
Using carefully selected seasonal ingredients, they present an authentic Edomae sushi experience through an omakase course of sushi and refined dishes.

Every detail—from temperature and aroma to the level of ageing—is precisely considered to bring out the natural flavours of each ingredient.
Enjoy a special moment as the chefs’ craftsmanship unfolds before you, engaging all five senses.

Chef’s Table Kōyō – Edomae Sushi Omakase Course

At Chef’s Table Kōyō, continuing the craftsmanship and spirit of the renowned Ginza restaurant Sushi Ishibashi Masakazu, guests can enjoy authentic Edomae sushi crafted with seasonal ingredients and traditional techniques.

Alongside the chef’s omakase course, an à la carte sushi selection is also available for those who wish to enjoy fine sushi more casually.

Each piece is prepared with meticulous attention to temperature, aroma and maturation, bringing out the natural flavours of the ingredients. In an intimate, lively setting, savour a refined sushi experience as the chef’s artistry unfolds before your eyes.

We offer bespoke wine pairings tailored to your meal and personal preferences. Our experienced sommelier carefully selects wines to enhance and elevate each course.
A selection of rare premium wines is also available by the glass, served using the Coravin system to ensure optimal quality and freshness.
